Cooking w/ Iron ~

Advantages of Using Cast Iron to Cook

Evenly distributes heat
Withstands high heat without warping
Can last many lifetimes
Features a chemical-free nonstick surface
Is 100% recyclable (if you ever managed the unlikely feat of destroying one)
Soap-free cleaning (just scrub with hot water and a plastic brush, then dry)
After seasoning, maintaining is easy (wipe with veggie oil after it dries from washing)

Iron Skillet ~” Chicken Pot Pie” ~ Recipe

Makes 8 servings
Prep time 25 min
Cook time 35 min

2 tbsp butter
1 med onion, chopped
4 med carrots, sliced into coin circles
2 ribs celery, sliced
1 tsp garlic powder
1/2 tsp salt and pepper
2 tbsp all-purpose flour
3 tbsp cream or milk
2 c. chicken broth
4 c. shredded chicken
1 c. frozen peas
1 (9 in) Pillsbury piecrust pastry ( or make your own)
1 egg, beaten

1. Preheat oven
2. Heat butter in 12 in iron skillet
3. Add onion, celery, garlic powder
4. Season with salt and pepper, cook until tender
5. Reduce heat and add in flour
6. Cook for 1 minute
7. Stir in cream or milk and broth
8. Stir in chicken, peas, bring to a boil
9. Roll out crust
10. Place in iron skillet, put crust on top
11. Brush top of crust with egg mixture

~ Bake 350 degrees for about 35 minutes

    Love the post on cast iron cooking! One nice thing about winter is the fun of using cast iron on our wood stove. We just last night used our wood heater to grill steaks with our cast iron fajita pans. I use my larger pot for making beans on it, and J.R. uses our small mini cast iron pans for each member of the family to have a personal breakfast dish. While the power was out last winter, we used the wood stove exclusively since the cast iron pans hold up well to such heat.

      I have not tried steaks on iron yet. But it sounds great. I love cornbread in an iron skillet, too. My mother used to make pineapple upside down cake in her iron skillet…oh was it yummy !!

      Another favorite of mine is Blacken Salmon in the oven in my iron skillet, now they are something to write back home about. HAHA !! My family loves it.

      Have a fun week in the snow 🙂 We got around 4 1/2 inches on Monday morning early…it’s beginning to melt.

  2. I actually just purchased my very first cast iron skillet last fall. I love it!
    Love it so much I bought another one. Smaller to just make a grilled cheese or something like that. 🙂
