Mexican Lasagna ~

Teresa’s Mexican Lasagna ~

Ingredients ~

2 pounds of fresh ground Turkey or Beef
1 medium onion
1 pkg of taco seasoning mix
1 or 2 bags of shredded mexican or sharp cheddar cheese
1 8 ounce carton of sour cream
1 fresh tomato
1/2 green bell pepper
1 cup of mild salsa
1 small can of sliced black olives
4 – 8 inch flour tortillas
optional – 1 small drained can of kernel corn and black beans

Directions ~

1. Brown ground turkey and chopped onion together.
2. Add taco seasoning mix with a little water.
3. Add Salsa in a separate bowl, dip flour tortillas on both sides.
4. Place 2 tortillas on the bottom of a 9×13 casserole dish.
5. Layer with 1/2 the meat mixture.
6. Layer of cheese.
7. Light sprinkle of salsa and sour cream.
8. Layer another layer of dipped flour tortillas.
9. Put remainder of meat mixture.
10.Layer with cheese.
11. Put 2 large dollops of sour cream on top.
12. Drizzle some salsa down the center.
13. Place dices fresh tomato and bell peppers down the center.
14. Place black olives on top.
15. Bake for 30 minutes on 350 degrees.

  2. Praise The Lord! I like your blog. It is very pretty and feminine. I actually found it through Google after searching for the author of a quote I found on Fascinating Womanhood. I too am Pentecostal and just heard your Pastor preach a couple weeks ago in Colorado. Small world huh?

  3. That looks really nice and healthy – I wouldn’t add the olives (yucky). I cook with lamb mince as it isn’t quite as dry as beef mince, I think it would work well in this recipe.
