Crockpot Recipe ~

This is a great recipe for when you are wanting to skip the meat or just cutting calories. My family likes it. This is a great easy recipe for younger daughers to make all my themselves. Hope you enjoy serving it to your family as well.

Meatless Mexican Crockpot Soup

Do not drain any cans
1 can diced tomatoes – 28 oz.
1 can diced tomatoes & chiles or mild salsa – 11 oz.
1 can of kidney beans – 15 oz.
1 can of black beans – 15 oz.
1 can of whole kernel corn – 11 oz.
1 pkg. of Taco seasoning mix
little water if you want it

Directions:
Combine all the ingredients in a crockpot and stir.
Cook on high for 2 hours and on low for 4 hours.

Garnish with:
Dollop of Sour cream
Shredded Cheese
Chopped green onions
Tortilla Chips, crushed on top or on the side

Tip: This recipe is also really good with 1 – 13oz. can of chicken breast shredded or 1 pound of brown ground beef, when you want to have meat.
